I think this is a pretty well known one.  Kirk sees Spock kiss Uhura's forehead, and obsesses over it, b/c it's so loving and gentle, and Kirk's only really been exposed to SEX, not love.  Spock and Uhura break up like 5 minutes later, and eventually it's K/S.

Also, still looking for fics where Kirk calls Spock 'Baby'.  Anyone?  Anyone?
