Hey there! :] I've been getting more and more into trek fandom, and having been raised a trekkie by my parents, they're quite pleased.
My dad in particular is more fandom-friendly as he's actually read fanfic before! Back in the day he read an officially published anthology of trek-fanfic, including a trek/rpf crossover where the cast ended up on the real enterprise!
So I offered to try and track down some gen fic for him to read.
I'd also be happy if anyone rec'd some gen fanmixes, or wallies also.
He said that he'd be okay if any of the fics had Scotty/any female character on the enterprise as a background pairing. But it should definitely be a /BACKGROUND/ pairing. :]
Any length would be fine, but any longer/novel length stories would be great, especially some big bangs. Go crazy! :D

Wrote the Book (http://insaneidiot.livejournal.com/68409.html) - Seminar on Inappropriate Workplace Behavior, nu!Trek style. It has hints of K/S slash, but if your dad can manage to read over two or three sentences, I figure he'll be okay, and it's so hilarious, it would be a shame not to read it at all.
Hundreds and Thousands (http://www.fanfiction.net/s/5089807/1/Hundreds_and_Thousands) - Tribbles. You remember tribbles, right??? *lol*
Convergence (http://mijan.livejournal.com/145497.html) - Focused on Pike, McCoy, Kirk. It's a pretty realistic interpretation of how they all came to be on that shuttle from Riverside to SF. Fills in some missing scenes and background story for each character and fits into AOS-movie canon seemlessly.
All the King's Men (http://mijan.bravehost.com/andallthekingsmen.htm) - Set in the same universe as Convergence. McCoy&Kirk friendship fic, but it might still be a bit too slash-tinted for a parent. Set in the academy, where a simulation drags up memories from Tarsus IV for Kirk and McCoy tries to help him deal. There are some A/Ns at the end that are worth reading.
And already it is as old as you are (http://pervyficgirl.livejournal.com/229408.html) - I know what you said about pairings, but this hardly counts as romance and I think it's worth a read anyway. It explores the two timelines from two pov and their convergence through SpockPrime: SpockPrime for TOS, and T'Pol (the Vulcan female from Enterprise, although you don't need to actually have seen the series) for nu!Trek. What references there are to K/S are nothing worse than what you saw on the show.
That's really all the genfics that I can remember, sorry. I have bookmarked longer ones, but those are all slash...

Lost and Found (http://ksarchive.com/viewstory.php?sid=414) by UKJess, an awesomely plotty TOS story. Author's summary: Kidnapped and then mysteriously released by the Romulans, Kirk is travelling back to Earth to stand trial. Can his friends, and the rest of the crew of the Enterprise do anything to help this self-confessed traitor? Again, has a great plot, and some particularly amazing and touching/inspiring scenes.
Hero Complex (http://www.fanfiction.net/s/5463893/1/Hero_Complex) by SpiritBearr, in which the TOS Kirk, Spock and Bones somehow get thrown into a prison with their XI counterparts. A very balanced look at the similarities & differences between the two versions of the characters, giving each their own strengths and weaknesses. WIP, not much plot so far, but a lot of character development.
Not All Those Who Wander (http://community.livejournal.com/parrotfic/27428.html) by parrotfic, for a more whimsical look at what happens when the TOS and XI worlds collide as Spock Prime wanders the XI-verse. Author's summary: Spock Prime has found ways to keep himself occupied; the universe doesn't know what hit it.
