Is there any Mirror Unoiverse fics with these pairings:  Kirk/Rand, Scotty/Uhura  (XI) Kirk/Spock, Kirk/Spock/McCoy?

Yep, issenterprise should be your first stop. Then, for the K/S pairing, the ksarchive: mirror universe (http://ksarchive.com/browse.php?type=class&type_id=3&classid=61) is the next stop. And here are bookmarks to a few of my own favorite mirror universe fanfics: AOS mirror (http://www.delicious.com/csad/startrek%3A2009+mirror-verse) and TOS mirror (http://www.delicious.com/csad/startrek%3Atos+mirror-verse). (Because I'm not sure if the XI in your entry referred to Scotty/Uhura or K/S or both.)

As for the other pairings, while I can't really help with that, this newbieguide (http://newbieguide.dreamwidth.org/259.html?#cutid64) over at dreamwidth has a few communities listed. I'd say go see if there are any mirror verse tags?
