You may have already seen this one, but Mijan's academy series (http://archiveofourown.org/series/5229) is really good, really plotty, and really long McKirk gen.

I love A problem from hell (https://www.fanfiction.net/s/9611983/1/A-problem-from-hell) by Beamirang. It has Sam in it. It's GEN. Fairly new to this fandom so I have very few, but if you're interested I made a LIST (http://0vicati.livejournal.com/11744.html) of my most favorite McKirk fics so far. :D

The Basics of Primary Ed (http://archiveofourown.org/series/45901) by Caera1996.
It's a massive, epic story with two big novels at the start, lots of shorter stories, and another novel to finish. Fits the bill for long and plotty, features Sam Kirk, plus both McKirk and friendship.
I'm not even a McKirk fan, but I was absolutely riveted. Although some of the sex (when they get to the top/bottom part) is bottom!McCoy, but if you let that put you off, you'll be missing out on something truly wonderful.
