I highly recommend Cast Out Fear (http://archiveofourown.org/works/1019956/chapters/2028737) by s0mmerspr0ssen. It's been awhile since I read it, but the bookmark I have for it says this: "The author improves on the reboot movie by saving Vulcan and Amanda. Jim Kirk is the big hero who saved Vulcan, but he's shyer, sweeter, and less egotistical than the movie Kirk, which improves him greatly. Spock is true to character and feels mostly Vulcan but with human uncertainty and desires. Jim's PTSD is portrayed better than most fan authors (or pro authors in SF) manage, and the author includes some lovely touches like having Vulcan healers give Jim a POINTED ear to show what Vulcan thinks of him.
Sweet, sensitive, and lovely. Highly recommended. This is the story Abrams should have used for the 2009 movie."
Another story where Vulcan isn't destroyed is Quondam Rex (http://archiveofourown.org/works/1662575/chapters/3527600), by rabidchild67. In this story, it's Winona Kirk who's killed, not George Kirk, and George hires Spock Prime to raise Jim and Sam.
